After last weekends Lime and Coconut Macaron adventure, I had a stack of leftover lime curd. I can’t stand wasting things that I’ve made, so this weekend I decided to make some delicious Lime & Cream Tarts. I cheated a bit on this and bought pastry shells from the supermarket (because homemade pastry is the devil!!!!). But I don’t think there’s anything wrong with using bought pastry shells – they taste just as good and they save a lot of time. But if you’re any good at making pastry, definitely make it for these tarts, just for that extra little bit of love!
Lime & Cream Tarts
Makes about 12 mini tarts, or 6 medium. Or you could make a great big one if you want! Takes about 15 mins to make (if using bought pastry shells).
INGREDIENTS & INSTRUCTIONS
- pastry shells (bought or homemade)
- ½ cup sifted icing sugar
- ½ cup sour cream
- 250g softened and chopped cream cheese
- 1tsp white rum
- lime curd (my recipe is here)
Using an electric mixer, beat together icing sugar, sour cream, cream cheese and rum until smooth. Then fill the pastry cases with the cream and put about a teaspoon full (if making mini tarts) of curd on top in the centre of the tart. Then using the back of a spoon, spread it evenly out towards the edges. Once done, pop in the fridge for a couple of hours to set. Then bon appetit!
